The game also teaches you that one way of sparing enemies is to reduce their HP to a low enough amount. When all else seems to fail, the natural conclusion is to try that on Toriel. That's what she's asking for, after all.
That's entirely intentional. The point is to kill her, reload, try again and then get taunted by Flowey. Most players will try this the first time.

Yep, exactly.
I only knew to go past her this way only because I played the demo previously, in which I did do and got the “You felt bad and so you went back, didn’t you?”
I have to admit that this is true for me too. I mentioned that it was obvious but I probably would have missed it.
The only reason I knew you could spare her is because I played the demo years back.
Unless you see that Toriel is holding back, that doesn’t become obvious. Which suggests that people who are actually good at dodging would never see her restrain herself and would just keep attacking like normal.
And I remember that after trying to spare her several times the ellipsis response comes up a few times. So I just assumed that like the talk option, there was no way it would progress.
Someone asked what is the industry mainstream regarding software, this is our mental map, to arrive to OZ, follow the yellow sidewalk! :)
Please take this with a grain of salt. This is just valid for 2015, and this is a set of recommended choices if you want a pro life, not if you are an occasional artist.
I made the post because we both faced a choice once, and we chose Max instead of Maya.. Director instead of Flash.. UGH.
It’s also worth noting that the preferences for your region may vary. This is pretty accurate in my experiences, but I know flash is still in wide use despite efforts to switch to toon boom.
I know I’m not in the industry but..
Seeing Zbrush as an industry standard for modeling annoys me. Only because when I was taking my classes we learned that Zbrush was good for sculpting. Adding details and such. But your base models had to come from Maya. After you finish sculpting you could then import back into Maya and texture/ animate.
But what do I know? Hell I’m not even good at modelling. Maybe I should take up Z-Brush again.
